Verrine “Otehimin” – Strawberries & Wildflowers
A deconstructed cake made of wildflower buttercream, wild rose sponge cake, and a wild strawberry compote.
The strawberry, heart-shaped, is known as O-day-min — the heart berry, which carries many teachings. Among them is the importance of maintaining balance between the mind, the body, and one’s emotions, all of which are interconnected.
Verrine “Ashuapmushuan” – Black Pine Forest
A reinterpretation of the classic Black Forest cake, this verrine transports you to the heart of the woods.
Sponge cake with 70% dark chocolate soaked in pine syrup, buttercream infused with balsam fir, and elderberry compote.
A creation inspired by Saguenay, land of pines, which the Innu people called “Ashuapmushuan” — “where one sees the moose.”
“Pawpaw” Cake with Cedar & Cloudberry
The pawpaw fruit offers a sweet flavor reminiscent of custard, with a shape similar to a mango.
In certain Indigenous traditions, the pawpaw carries deep cultural meaning, representing a connection to ancestral lands and a memory of what has been lost. It symbolizes abundance, family lineage, and the ability to overcome difficult situations. It reminds us to appreciate the simple things in everyday life.
