Sponge cake with 70% dark chocolate soaked in pine syrup, buttercream infused with balsam fir, and elderberry compote.
A creation inspired by Saguenay, land of pines, which the Innu people called “Ashuapmushuan”“where one sees the moose.”

“Pawpaw” Cake with Cedar & Cloudberry
