Discover the Art of Indigenous Storytelling in Every Bite

The Kîsisam workshop-conference invites your clients to experience a unique immersion into the heart of Indigenous culinary traditions, guided by Dominique Lalonde, an Indigenous pastry chef from the Oji-Cree First Nation of Sachigo Lake. Trained at Le Cordon Bleu and deeply rooted in the spiritual mission she received in 2019, Dominique shares how Kîsisam — “the one who bakes with fire” — became a bridge between ancestral heritage and modern pastry creation.

An Exploration of the Sacred Ingredients of the Forest

The workshop highlights the traditional ingredients used by Indigenous peoples for generations. Through stories, demonstrations, and tastings, participants discover:

Plants, trees, and flowers: purifying sage, balsam fir, fragrant sweet clover.
Wild mushrooms: sacred chaga, chanterelles, porcini, black trumpet mushrooms.
Natural sugars: maple syrup (the “friendship syrup”), birch syrup, Northern honeys.
Wild grains: manoomin (wild rice), a sacred food and symbol of gratitude.
Northern berries: lingonberries, elderberries, haskap berries, sea buckthorn.

Each ingredient is presented with its cultural history, properties, symbolism, and culinary applications, allowing everyone to understand the richness of the land and Indigenous knowledge.

A Taste Journey Rooted in Culture

Dominique shares how each ingredient carries a memory:
that of the ancestors, the forest, rituals, and the passing down of traditions.
A tasting of signature creations (chosen by the client) — such as our chaga brownies, birch-syrup cookies, fir-infused cakes, or dune-pepper pastries — allows participants to experience Indigenous storytelling in every bite.

More than a culinary workshop, this conference is a celebration of the land, respect for nature, spirituality, and Indigenous craftsmanship.
